This sandwich was one of those "standing-in-the kitchen-staring-in the-fridge-hoping-inspiration-strikes-and-then-it-does" moments. An upgrade on the BLT, this vegetarian sandwich combines veggie bacon, lettuce, tomato, avocado, mayo, and vegan cream cheese. I cooked the bacon in the toaster oven and put it all on rye bread that I first nuked in the microwave. I spread cream cheese on one slice of bread and mayo on the other.
