This is another pita pizza recipe. I was always reading things that said pita made a good pizza crust, but it never worked for me. It was good, but not pizza-y enough. Here's what I do to make it better.
1. The kind of pita matters. It needs to look like a pizza crust. Pick one that is flat and light colored and doesn't have a "pocket". My favorites are Greca Pita or Alexis "Original Greek Pita Flatbread".
2. The next essential step is to rub the pita on both sides with oil. Real pizza is oily. The oil helps the flavor and texture of the crust and helps it get the right color.
So today's pizza- Chick'n & Pineapple
Serves- 1. Prep- 5 minutes. Cook- 6 minutes. 11 minutes total!!
Ingredients
1 Greca Pita
1 T olive oil
2 tsp left over pasta sauce
3 or 4 Simple Truth "Meatless Griller Strips"
8 or so chunks of canned pineapple
1/4 cup Daiya shredded cheese
1. With a clean cloth, paper towel or your hands, rub the oil on BOTH sides of the pita.
2. Pop the strips in the microwave for 20-60 seconds just until they are thawed.
3. Spread the pasta sauce on the pita. I stop just short of the edges.
4. Squeezing out the juice, tear the pineapple into smaller pieces.
5. Tear strips into smaller pieces.
6. Spread pineapple pieces and strips pieces evenly over the pasta sauce.
7. Spread the cheese over top.
8. Cook about 6 minutes on the "Toast" setting in the toaster oven. *Hint* you can do two pitas if you have two shelves in your toaster oven. Just cook for three minutes, swap the bottom and top pitas and cook another 3 minutes.
9. Slice it up and shove it in your mouth with both hands.
I love this and also do a fake bacon or fake ham and pineapple. You can also swap the pasta sauce for BBQ and add a little BBQ sauce to the chicken.
