In my constant struggle to find foods the TLT will eat, I take my inspiration from many sources. This dish makes a great breakfast and is inspired by the sticky rice with mango served at my favorite Thai food restaurant, Thai House. I wanted something I could make at home, quickly.
SWEET RICE WITH MANGO
1 Cup Microwavable Instant Rice
1 Cup water
1/4 cup chopped mango (I use the frozen chunks and cut it up into smaller pieces)
1/4 cup coconut milk
2 TB brown sugar
splash of vanilla or vanilla flavor
Cook the rice with the water according to the instructions. In a bowl mix the coconut milk, sugar, vanilla and mango. Fluff the rice with a fork, mix in everything else. And. . . serve.
See, fast and easy. The TLT loves it. I started out feeding her with a spoon but soon she was grabbing it by the tiny little fistfuls and shoving it in her mouth.
